No card to share today, but I wanted to post "something" on my blog before I forget how to do it ;)
One of the nice things about summer is having the leisure time to teach my kiddos various things. So today Ali and I tried our hand at making ricotta gnocchi. Up until several weeks ago I didn't even realize there was such a thing as gnocchi made with ricotta cheese. I've eaten gnocchi a number of times in restaurants, but I thought it was always made with potato. I never tried making it at home, because honestly it always seemed like a lot of work. Well I came across this You Tube video, and it seemed quite easy, easy enough for me, and even for my kids to do. I hope this link will work, it'll provide you with the very simple recipe and cooking method:
We followed this video pretty much to a tee, and quite honestly Ali did almost everything herself, I only had to direct her.
The only thing that I would do differently next time would be to make them quite a bit smaller, these were pretty big. But they tasted delicious! We served them with our favorite jarred spaghetti sauce, and topped them with freshly grated parmesan cheese; YUM!
As I mentioned, this is a great recipe to do with kids who are old enough to work around boiling water. Ali was bursting with pride at her accomplishment (and so was I!!)

LOVE LOVE LOVE LOVE LOVE and it just so happens that I have another container of sauce i made last week that need to find a home ....... I am going to take a peek and check this out. I have always wanted to try it with potato but it is a PIA ........ Lydia shows how to do it and I would have to start drinking before I could get it done. Great for Ali~~

Thanks for sharing this recipe. I also thought gnocchi was made out of potatoes! I know what's in the menu at home for tomorrow night:)
ReplyDeleteYum! I love that she did most of the work herself...gnocchi isn't exactly "easy" and it looks like she did a great job.
ReplyDeleteMy grandmother used to make gnocchi from cream of wheat that I loved as a child. Haven't had it since I was about 7 but I may have to experiemnt myself. Thanks for the inspiration!

These photos would make a great scrapbook page, and your daughter obviously did a fantastic job making this meal! I've never tried making them as the job just seemed to be too time-consuming and tedious, but I'll check out the link you provided.
